So the staple that holds this family together are quick 30 minute (or less) one pot meals. I’ll squeeze a crockpot meal in at least two days of the week.
He asked if I cooked when we first met…..yeahhhhhh! I just didn’t mention mostly one pot meals. So now we have two littles under two and any food to be cooked has to match the attention span my boys give or through nap time.
Fettuccine is pretty easy to make with chicken or shrimp. You basically can add any combination of veggies with a sauce and paremesan cheese makes it yummy.
Last night I made Chicken & Mushroom Fettuccine. It was fantastic!
- 3 Chicken Breasts
- I pack Mushroom
- Half an onion
- 3 Garlic cloves (I love garlic, use more or less to your liking)
- Heavy cream
- Parmesan cheese
- Fettuccine noodles
- Salt & pepper
In a pot of boiling water cook your noodles. I add a tablespoon of EVOO and a dash of salt to my water. First, I sautee my garlic and onions with EVOO ABOUT 2-3 minutes to bring out the flavor. Cut the chicken into 1- inch cubes and add to the garlic and onions. Add salt and pepper to taste.
Next, add your mushrooms and cook until brown and soft. When your chicken and veggies have cooked add 3 cups of heavy cream. Simmer for 10-15 minutes. When finished you can add the Parmesan cheese to your chicken , shredded I prefer, or sprinkle on afterwards.

See! Pretty simple and delicious. I served it with a side of steamed broccoli.
