The last three years have been great, I have connected with other moms, made new friends, live and socially.

BUT.

There is always a but, how effective is my platform. I am always at a cross roads as to what content to post that will create a discussion. When you look at all the social media influencer pages everything is prim, proper, beautiful, even mystifying with bold pictures.

BUT.

At first, I truly blogged in hopes of gaining followers and being labeled as an “influencer.” Securing the bag and gaining popularity was high on the list.

But now that my kids are growing, I cannot help but notice the world and the times we live in. To be a great parent is to make your mark, set paths and examples and legacy for your kids. The ultimate goal: for them to have and be better than what you are.

We are living in horrible times with that demon and his inept wife as president, yes I said it, I have no sympathy for her either. Women have often been just as treacherous as their racist and bigoted counterparts.

Being a racist is becoming popular. Hatred is becoming popular. Violence is popular. And it could happen to anyone at anytime.

No racism has always been there. We’ve just never seen it’s ugly face displayed as often as we see on TV.

I loathe him and all that his administration and followers stand for.

There is no safety, no peace, no kindness, no compassion, no tolerance and lastly there is no GOD in this administration.

Haven’t you noticed?

I have worked very hard to get to the point where I have a true voice and at this point in my life and my career I have a responsibility to do what’s best for the world and not what is most popular.’ – Beyonce

At this point in my life, at 40, popularity isn’t even a goal for me. Change is. Doing what is mandatory for my kids to thrive in America. I want to use this platform to shed light on the good in the world but also the worst of it.

But first, VOTE them out of office. I’m with Maxine Waters, if you see them in public, let them know how you feel. After all they work for us, our voices.

The youth of today began this millennial movement for change with the March for Our Lives movement to change gun laws.

I am delighted young people are aware and involved. Watch out!

I hope you’re registered because voting, not just in the presidential election, but primary elections will change this presidency. Vote out the senators, state representatives and lawmakers that do not have our best interests at heart. We have loads of work to do. It’s cool to post your beauty hacks, dopest outfits and places and people you have seen. Enjoy life, really enjoy it. But can you really be at peace when another’s life doesn’t matter, isn’t fully capable or allowed to enjoy the liberties and freedoms of the world.

But don’t forget life outside those squares is real. I hope you are using your voice for change as well. We can’t be distracted by what only makes us feel good. We have to always be affected by that lump I our throats, the drops of our stomach and tearing eyes to stay connected to each other I this world .

It’s really simple, the solution that is.

LOVE.

I know it cliche but it’s the truth. Because within love you find, peace, hope, faith and ACTION. Love is all of those things but most of all, it’s a verb.

Love is action.

So I will be at rallies this year, protest, signing petitions, making donations and whatever it takes to make change happen.

But until then I will enjoy babies and my family in my lifetime and pray this world will be different for #dembabies

vegan chickpea curry

This vegan thing is getting way out of hand. I’m hooked on the chickpeas and curry recipes. Both have extremely helpful benefits for you as well. See here and here.

At first this was just a seven day kind of thing but now it’s been 16 days and I’m kinda liking it. Don’t get me wrong I caved in for some hot wings a several days ago. My ultimate goal is to reduce the meat intake. I’m transitioning… barely vegan!

So I made this Chickpea Curry and it was delicious nevertheless.

Okay so let’s get to the recipe.

It’s fairly simple the entire time was about 10 minutes prepping and 10-15 minutes cooking time.

First you’ll need:

  • 2 cans of chickpeas rinsed and drained
  • 1 can of coconut milk
  • 3 cloves of garlic
  • 2 medium onions
  • Salt and pepper to taste
  • Grape tomatoes
  • 1/2 lime juice
  • 1 tsp soy sauce
  • Veggies (I used spinach, Ive used carrots and potatoes before)
  • Spring H2O to dilute to thickness desired
  • Basil leaves
  • Bay leaves for rice
  • Basmati/Jasmine rice

I first began to cook my rice, it will be finished by the time the curry is done.

Sautée onions until clear for about 5 minutes. Add garlic next and cook for five minutes more.

Next add your can of coconut milk and stir. Simmer for 2-3 minutes.

Add chickpeas, green onions, tomatoes, soy sauce and simmer. After about 5 minutes add your spinach or depending on what veggies you have. For example carrots and potatoes should be added early on. Soup will cook longer as well so turn your heat down.

Squeeze lime juice in now or wait until you’ve fixed your bowl. I like the sour taste afterwards!

my go to winter quickies for meals

It’s winter and I’m actually excited about it because the holidays and my birthday is approaching.

I love cooking but I love one pot meals.

I have two toddlers that have bottomless pits so I have to be careful and creative with their selections.

Soup is the best way to get the boys to eat their veggies without kind of realizing it. I don’t generally have a problem with them eating veggies they chose to eat it last of course.

I finally got my egg drop soup down!!

Super simple recipe!

Chicken broth, green onion, mushroom soup base (my preference) and three eggs slightly beaten.

Bring to a boil all your ingredients but the eggs. Once water comes to a boil simmer did wh and then add eggs. Stir while pouring eggs in. If you want larger eggs in your soup then don’t stir often the opposite for smaller eggs.

I always have fresh veggies left over after cooking meals and it usually goes bad or tossed. I blend some items but I have started to make veggie soup out of all the veggies left over.

This week we had lima beans, red lentils, green beans, corn, tomatoes, okra and potatoes.

I’ve started keeping a pot of beans or soup on the stove lately. For me, it’s cheap, easy and quick to make. I usually prepare it while I’m making breakfast and simmer for an hour to an and a half.

Beans and cornbread were a staple in my house growing up. I vowed to never eat them again…… that is until you had kids so now he boys get beans and cornbread in the regular. I tried a Mexican cornbread…Y’ALL!!! I’ll have to post that later.

I add a ton of veggies and I use a vegetarian soup base that I purchased from an Asian market.

Another way I clean my fridge of left over food is assortment trays. These are really fun to use and the kids love it. Sometimes you just have half is bunch of grapes, half a pack of crackers , two slices of meat, I could go on. This allows you to taste some of everything. Sometimes, I just get tired of seeing some food and just ready to get rid of it so this is easy way to do it.

So soups, beans, assortment trays are all regulars over here.
